Yogurt pastry with fruit - recipe
Yogurt pastries are one of the simplest and healthiest desserts. It is suitable for all the dessert lovers, as well as for those who like healthier and less caloric desserts. Any fruit of your choice will give a special taste.
We prepared a simple yogurt pastry with fruit recipe for you, and at the end, a winter version of this delicious dessert is waiting for you.
What are the ingredients?
All of them you already have at home!
For this yogurt pastry you will need:
- 360g Greek yogurt
- 5 TBS coconut oil
- 1 cup of coconut sugar (you may use less) or 2 TBS. agave syrup
- 4 eggs
- 1 tsp. cinnamon
- 3 cups of pastry flour
- 1/2 tsp. baking powder
Pre-heat the oven on 180° C. Spread a thin layer of coconut oil to coat your baking pan, and sprinkle a little flour or breadcrumbs over it. Next, we prepare the dough for which need a large bowl. Add yogurt, eggs and coconut sugar and stir well. After everything is mixed together, we add coconut oil, flour and baking powder. When the mass is well mixed, pour it into the baking pan and bake for 30 minutes.
Would like to check if the dough is baked, but you don’t know how? We will share some tip with you! Take a toothpick and insert it in the middle of the cake. If it comes out clean, the cake is baked, otherwise leave it to bake for another minute.
When and which fruit should be added to the pastry?
Add any fruit (apricots, pears, strawberries, ..) to the cake. If you have fresh fruit, simply add it on top of the dough and bake. Dried fruit (mango, cranberries, ..) is best cut into small pieces and mixed into the dough. If you have frozen fruit, we advise you to thaw it first or sprinkle pastry flour over it. This is very important to avoid sticky pastry.
Our favourite combination is yogurt pastry with agave syrup and raspberries. It has a very refreshing and juicy taste. The advantage of this dessert is that you can prepare it at any time of the year. As promised, we have a very special recipe for you, especially suitable for colder days.
Yogurt pastry with with apples and cinnamon
As the winter is coming, we will choose the ingredients for the yogurt pastry accordingly. We will add cinnamon and apple cream to the dough, which ensures the perfect combination for autumn or winter. All together we will enrich with yogurt cream on top.
What are the ingredients for the yogurt pastry with apple cream and cinnamon?
For the yogurt cream:
- 4 cups of Greek yogurt
- 250 ml sweet cream
- 2 TBS. ground coconut sugar or erythritol
- 8 sheet of gelatine
- vanilla sugar (optional)
For the apple cream:
- 3 small apples
- 2 TBS. ground coconut sugar
- 1 TBS. coconut oil
- 1 tsp. cinnamon
Directions
We’ll start with the apple cream. Peel the apples, cut them into small pieces, and put them in a pan. Add the coconut oil, coconut sugar and cinnamon, and cook all together until the apples are completely softened. Let it all rest until it cools down completely. You can serve the softened pieces of apples on the pastry or blend them with a blender until smooth, to get apple cream.
Next is the yogurt cream. First, take the gelatine sheets and soak them in cold water until. Meanwhile, pour 3 tbs. of milk into the pan, heat it and add the soaked gelatine. Heat everything together until the gelatine dissolves. Next step is whipping the sweet cream. In another bowl, mix the yogurt with the coconut sugar and vanilla. Add the hot gelatine and mix well (preferably with a mixer). Then add the chilled apple cream. In the last step, add the whipped cream gently and start making the pastry (as explained above).
Pour the yoghurt cream over the baked pastry, or add it with a spoon. Before serving the dessert, pour apple cream over it, sprinkle with cinnamon and decorate as you like – you can add apple pieces or cream on top. Voila! In front of you is a simple and extremely light dessert.
