CHOCOLATE BOWL
Ingredients:
- 1 ripe banana
- 2dcl water
- 2 tablespoons cacao rice drink
- 2 tablespoons oat flakes
Method:
Blend the banana and oats. Mix the rice drink with water and add to the blender. Blend together till smooth.
Pour the mixture in a smaller bowl, add banana slices and sprinkle with oats.
COCONUT CACAO PUDDING
Ingredients:
- 200mL water
- 3 tablespoons coconut rice drink
- 3 tablespoons coconut flour
- 3 heaping teaspoon of corn starch
- 2 heaping tablespoons cacao powder
- coconut chips
Method:
In a pot, mix the coconut rice drink with water. Add the coconut flour and mix well using a spoon till smooth (no lumps).
Mix the corn starch with a bit of water.
Let the coconut mixture come to a boil, take off the heat and stir in the corn starch. Put the pot back on the heat so the pudding thickens. Mix continuously.
Take the pudding off the heat and pour in the cups/bowls of your choice. Place in the fridge for about two hours.
The pudding hardens when it is completely cold. Sprinkle with cacao powder, coconut ships and dig in.
ALMOND PANCAKES WITH MIXED NUTS
Ingredients:
- 3 heaping tablespoons almond rice drink
- 120g almond flour
- 2 tablespoons agave syrup
- 50g cacao butter
- 100 mL of water/ almond milk
- 1 teaspoon Himalayan salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Mixed nuts
Method:
Place the cocoa butter in a small bowl and melt over a pot of boiling water.
In a small bowl, mix the almond flour, almond rice drink, baking powder and salt. Mix the wet ingredients: water or almond milk, vanilla extract, agave and cocoa butter.
Add the dry ingredients to the wet ones, mix and let rest for a few minutes.
Put the cacao butter in the pan and wait for it to melt. Add a ladleful of the mixture and spread it to make a circle as it is quite thick. Wait about 2-3 minutes, then carefully turn the pancake and cook on the other side for another 2-3 minutes.
Repeat the process until you run out of the batter. Serve the pancakes with honey and mixed nuts.
