Pumpkin oatmeal energy cookies with peanut butter, chia seeds, agave syrup and sprinkled with chocolate are extremely crunchy. You won’t be able to resist these delicious vegan cookies with no added sugar.
AGAVE SYRUP
Agave syrup is a natural sweetener similar to honey that is used to sweeten different foods and drinks.
Agave Syrup is derived from the sap of the agave plant and heated at a low temperature so all of the nutrients of the agave remain.
Agave syrup is sweeter than regular sugar so you need less of it. It has a very low glycemic index as well. It doesn’t crystalize and dissolves quickly in hot or cold liquid.
Therefore agave is an ideal substitute for white sugar.
CHIA SEEDS

Bio Chocolate Chip Peanut Butter

Ingredients
- 300g Hokkaido pumpkin
- 50g gluten-free oats
- 30g Nature‘s Finest chia seeds
- 30g Nature‘s Finest coconut chips
- 30g Nature‘s Finest agave syrup
- 50g Nature‘s Finest chocolate peanut butter
- 30g vegan chocolate chips
- pinch of Himalayan salt
- tsp of Nature‘s Finest cinnamon
- tsp of cream of tartar
Method
- Cut the pumpkin into small cubes and bake for 30 minutes at 180 degrees celsius till it’s soft. Then add it to a food processor and blend to form pumpkin puree. Let it cool.
- In a food processor blend together the oats, chia seeds, coconut chips, cinnamon, salt and cream of tartar.
- Add the wet ingredients – agave syrup, peanut butter and cooled pumpkin puree. In the end, take a spatula and mix in the chocolate chips. Form cookies and add some chocolate chips on top. Bake for 15 minutes at 189 degrees celsius.
