Paleo Snack Christmas bread
INGREDIENTS FOR THE CHRISTMAS BREAD
- 35 g goji berries
- 125 g Nature’s Finest paleo snack mix
- 20 g cranberries
- 40 g Brazil nuts
- 1 TBS. orange pill
- 1 tsp. cinnamon powder
- ½ tsp. ginger powder
- ½ tsp. ground cloves
- 50 ml rum or orange juice
- 60 g coconut oil
- 40 g Nature’s Finest rice drink powder
- 200 ml water
- 60 g agave syrup
- 2 TBS. lemon juice
- 1 tsp. vanilla extract
- 150 g ground almonds
- 150 g flour of your choice
- 1 packet of baking powder
- ½ tsp. baking soda

DIRECTIONS FOR PREPARING CHRISTMAS BREAD
- Chop the nuts, goji berries, cranberries and coconut from the Paleo Snack mix into smaller pieces. Then, in a deep bowl or other large container, mix all the ingredients from the first list and let them soak for at least half an hour or as long as possible (maybe overnight).
- Preheat the oven to 180 ° C and line the pan with baking paper.
- Melt the coconut oil over a water bath.
- Mix the rice drink powder with water and pour it over the coconut oil. Add agave syrup, lemon juice, vanilla extract and ground almonds.
- Sift flour, baking powder and baking soda, and add them into the mixture of wet ingredients. Finally, add the dried fruits and nuts.
- Transfer the mixture to a baking pan and bake in the oven – first 30 minutes on the middle rack and another 15 minutes on the bottom.
- Wait for the Christmas bread to cool down completely before slicing it. If desired, you can decorate it with chocolate or sugar glaze.
