Muffins – recipe
Freshly baked muffins in a paper muffin cup are extremely tempting – even adults find it hard to resist, so how could children? So, why not prepare these delicious treats yourself? They are quick and easy to prepare, and most of the ingredients can be found in almost every kitchen.
Here are some tips for perfect muffins:
- Always preheat the oven and do not open it while the muffins are baking.
- Weigh the ingredients carefully and always in the right amount
- Do not use more than the recommended amount of baking powder. If we use it too much, the muffins will not grow more, but will fall apart and become sticky.
- Mix the prepared dough quickly. With too intense mixing, the muffins become hard. The ingredients must be soaked evenly.
- Pour the dough into the models and bake immediately after mixing, as the baking powder starts to work as soon as the liquid is added.
- We should not bake them for too long because they may dry out.
- Best served freshly baked, or cooled the next day
- Muffins can also be frozen. Thaw them for 2-3 hours at room temperature or into an oven preheated to 180 degrees Celsius for 15-20 minutes.

Goji berry muffins are the perfect dessert to enjoy at breakfast, lunch or as a healthy dinner. The preparation will only take you 30 minutes, and you can serve them hot or cold. Finally, you can pour agave syrup over them or add banana-flavoured peanut butter.

Ingredients for the muffins
- 200g goji berries
- pinch of cinnamon
- 280g almond flour (optional)
- 3 tsp. baking powder
- pinch of Himalayan salt
- 1 banana
- 120g coconut sugar
- 2 eggs
- 200ml plant-based milk
- 6 TBS. coconut oil
Directions
- Add the goji berries in a bowl, pour hot water over them and leave for 1 hour to soak up the liquid. Grease a baking tray with coconut oil or place paper muffin cups in the muffin tins.
- Preheat the oven to 200 degrees Celsius. Sift almond flour, baking powder, cinnamon and Himalayan salt into a large bowl. Add sugar as well.
- In another bowl, lightly whisk the eggs. Add the vegetable milk, banana and melted coconut oil. Make a hole in the middle of the dry ingredients and pour the mixture of liquid ingredients into it. Finally, add the goji berries. Mix everything quickly, but not too intensely.
- Use a spoon to pour the mixture into the muffin tins. Put in the oven and bake for 20 – 30 minutes, so muffins will rise and get a golden brown colour. When nicely baked, if pressed with a finger, muffins get back to the original form.
- Cool down the muffins in the muffin tins for 5 minutes. Serve them warm, or cool them completely on a kitchen rack.
