Carob roll (potica) without milk and eggs
Holidays are here! It is quite common to gain an extra kilo during the holidays due to fatty and sweet treats. Bad conscience and weight gain can be prevented, at least a bit, by choosing healthy desserts instead of the classic ones…
The nut roll, or potica, is a must on the holiday table. The classic one contains refined white flour and refined sugar. Even if we replace a few ingredients, our potica can have significantly better nutritional value and significantly fewer calories.
Today, housewives bake nut rolls with all kinds of fillings. We most often use walnut, chocolate or tarragon filling, but also potica without filling is quite popular. The traditional one, baked according to the grandmother’s recipe, is a carob potica.
Carob is an excellent source of vitamins and minerals, and tastes similar to cocoa. Due to its sweet taste, it is often used in all types of desserts. In addition, carob is also an excellent appetite suppressant and is part of various weight loss programmes.
Because we also take care of our health during the holidays, this year we will bake carob potica. Our recipe is also suitable for vegans, as it is refined sugar, refined flour, eggs and milk FREE.
Ingredients for the dough:
- 1 yeast cube
- 1 dl. of warm water
- 1/2 tsp. of turmeric powder
- 4 TBS. of olive oil
- 500 g wholemeal flour
- 2 TBS. of coconut chips
- 1,5 dl. vegan milk
Ingredients for the filling:
- 300 g carob flour
- 2 TSP. of raisins
- 4 tsp. of coconut sugar
- 1 finely grated apple
- 1 tsp. of coconut oil
- 6 tsp. of cocoa powder
- 1/2 tsp. of Himalayan salt
Directions:
First prepare the yeast – a cube of yeast, 1 dl of warm water, a teaspoon of sugar and a teaspoon of flour and leave it on warm place for 10 minutes. Use all the ingredients to make and knead the dough, and leave it to rise in a warm place for about 1 hour, covered with a kitchen cloth, and in between, knead it again (after about half an hour).
Then, roll out the dough to a thickness of about 5 mm and spread the filling evenly. Wrap and place in a baking pan. Let it rest in the baking pan for an additional 20 minutes, meanwhile preheat the oven to 180° C. Bake for about 1 hour.
