Chocolate and peanut butter oat cookies
INGREDIENTS
- 125g peanut butter
- 65g cacao powder
- 100g coconut oil
- 175g Agave syrup
- 220g oats
METHOD
In a large bowl, mix the peanut butter, agave syrup, and melted coconut oil till combined. Add cocoa powder and oats. Mix well. Using a tablespoon, form the cookies on a baking tray previously lined with baking paper. Place the cookies in the refrigerator for 2 hours.
Chocolate Pralines with Peanut Butter
INGREDIENTS
- 250g baking chocolate
- 80g coconut oil
- 2 teaspoons vanilla extract
- 100g chocolate peanut butter
- 2 tablespoons Agave syrup
METHOD
Melt the chocolate and coconut oil in the microwave (45s). Add 2 teaspoons of vanilla extract and stir. Fill 1/3 of the muffin tin with the batter. Place in the freezer for 15 minutes. Meanwhile, mix the peanut butter, agave syrup, and coconut oil (2 tablespoons) and melt again in the microwave (15s). Fill the second layer with the mixture – ¾ muffin tin. Freeze for 5 minutes. Add the melted chocolate on top and sprinkle with a little salt. Place in the freezer for 1 hour.
Chocolate peanut butter cookies
INGREDIENTS
- 100g ground almonds/ almond flour
- 40g cacao powder
- 3 tablespoons Agave syrup
- 1 tablespoon coconut oil
- 30g dark chocolate chunks
- 100g chocolate peanut butter
METHOD
In a large bowl, using a fork, mix together the flour and cocoa powder. Add agave syrup, 2 tablespoons of peanut butter and 1 tablespoon of coconut oil to get a thick dough, then add the chocolate chunks. Using a spoon, shape the dough in circles, place on a baking tray and bake for 20 to 25 minutes at 180 degrees. When the cookies have cooled down a bit, spread every other with peanut butter and stick another biscuit on it.
