Vegan baked oat zucchini fritters
These delicate sweet vegan oat zucchini fritters are perfect for an afternoon snack or breakfast on the go.
Vegan and gluten-free!
Wet ingredients
(oat zucchini fritters)
- 1 tablespoon milled flaxseed + 3 tablespoons of water
- 1 tablespoon almond rice drink powder + 1/2 (175 ml) a cup of water
- 2 small zucchinis (grated, but don’t squeeze the liquid out)
- 1/3 (80 ml) a cup of your favourite peanut butter
- 1/4 (60 ml) a cup of agave syrup
- 3 small ripe bananas (about 1 cup of mashed banana)
Dry ingredients

- 3 cups oats (1 cup ground + 2 cup whole)
- 1 packet of baking powder
- 1 teaspoon of cinnamon
- 1/4 teaspoon pink Himalayan salt
METHOD:
Preheat your oven to 180 ° C (360F). Prepare two bowls, one for dry and other for wet ingredients. Then mix both types of ingredients till combined. Get a cookie sheet and use 1 tablespoon of the mixture for one fritter. Bake for 30-45 minutes (depending on your oven or how soft you like your fritters).
Tip: You can experiment and add 1/2 cup of chocolate chips or your favourite nuts for some crunch.
