Raw autumn cake
A raw vegan cake made from a few ingredients you surely already have in your pantry. It will make the adults’ as well as children’s mouth water. And it contains no added sugar!
Ingredients
- pitted dates
- cacao powder
- coconut oil
- coconut chips
- vanilla and cacao rice drink
- almond yoghurt
- pomegranate/fresh apples/raspberries
Preparatory work
Soak the pitted dates in water for at least 2 hours. The longer you soak them, the easier they will be to blend.
Method
- layer– Drain the soaked dates and blend in a powerful food processor. Add two tablespoons of coconut oil and mix. Then add 3 tablespoons of coconut flakes or chips, 1 tablespoon of cacao powder and 1 tablespoon of vanilla cacao rice drink for that heavenly vanilla taste. Blend till smooth.
- layer– In a blender, mix almond cream (plant-based almond yoghurt), a tablespoon of cacao vanilla rice drink and add coconut chips till the fixture becomes thick.
If you’d like you can top with fruit (strawberries, blueberries, raspberries, pomegranate)
