Yes, you heard it right! Pancake day dates back to a time when people had nothing but butter, milk and eggs at home. To keep their ingredients from spoiling, they were mixed and baked at a high temperature. This is how the first pancakes were made, which were then (as well as today) enjoyed by the dessert lovers so often that they earned their day – Pancake day.
American pancakes originate from America, where they are called American and Canadian pancakes, sometimes also called hotcakes, griddlecakes or flapjacks. They are usually served for breakfast, two or three pancakes stacked on top of each other, often in a salty form – with bacon, eggs or sausages, or sweet – served with butter, which melts on the freshly baked pancakes. For extra sweetness, toppings such as honey, maple or agave syrup may be used.

Ingredients for American pancakes
- ½ tsp. Himalayan salt
- 2 tsp. coconut sugar
- 150 ml plant-based milk
- 2 TBS. cocoa butter
- 20 g of chopped coconut oil
- 2 eggs
- 140 g white flour
- 1 TBS. baking powder
- 1 dl agave syrup
- Choco-coconut chips
- 95 g cocoa butter
- 50 g cocoa powder
- 57 g coconut sugar
- 25 g rice drink powder
- 1 TBS. of cinnamon
Directions
- Prepare a small frying pan and slowly melt 2 tbs. of cocoa butter in it. When it melts, remove it from the stove to cool down. Take a large bowl and mix coconut sugar, flour, baking powder and salt. Mix well all together.
- In another bowl, beat the eggs, add the plant-based milk and whisk with a fork. Add the melted and cooled butter. Add the mixture to the first bowl with the dry ingredients and use a whisk to mix everything together carefully, so that a smooth dough is formed. Let it rest for 30 minutes.
- Add a piece of coconut butter in the heated frying pan and make sure to cover the whole pan evenly. Then pour a little bit of the mass into the pan. Make sure that the pancake is not too big – it should be about half a centimetre thick and 10 centimetres large.
- When bubbles start to appear on the top of the pancake, you can turn it over with a spatula. When it becomes golden brown on the other side, the pancake is baked.
- Next step is to prepare the chocolate topping. Take the cocoa butter and melt it at a moderate temperature. In a bowl mix the ground coconut sugar, cocoa powder, rice powder and cinnamon. Slowly pour the melted cocoa butter into the bowl and mix everything together with a mixer.
- Pour the chocolate topping over the American pancakes, add fresh fruit, sprinkle with choco-coconut chips or some nuts and serve.
