Our version of healthy homemade bread instead of regular flour contains millet flour, ground oat flakes and ground flaxseed, and instead of regular salt, sugar and water, it contains Himalayan salt, agave syrup and rice drink powder. The recipe contains only the best ingredients for a healthy homemade bread. It is prepared from super simple ingredients and we have provided detailed instructions, which will help you to make great vegan bread! The bread is quick to prepare and stays fresh for several days. A tip for easier homemade bread preparation: millet bread can be made from millet flour by grinding millet porridge in a blender into a smooth flour. If desired, you can leave some of the porridge whole, and use it as such.

Directions 

  1. In a large bowl, mix together warm water, rice drink powder, yeast and agave syrup. Cover with a kitchen towel and let stand for 20 minutes. To the fermented mixture add salt, ground flax seeds and oil. Mix everything well and wait 3-4 minutes.
  2. Meanwhile, in another bowl mix the dry ingredients together (ground oatmeal, millet flour, baking powder). Add the wet ingredients to the dry ones and mix well again. The bread dough should be sticky and without lumps. If using a blender, blend for about a minute on medium speed. Otherwise, stir with a spoon or spatula until the ingredients are well combined.
  3. Lift the dough out of the bowl and lightly grease the bowl with non-stick spray or olive oil. Cover and let rise for 2 hours at room temperature and 2 hours in the refrigerator. If you only have 2 hours, leave it to rise only at room temperature and skip the fridge (although it is better to rise the bread longer). Make small holes in the dough with your fingers and add sunflower seeds and oat flakes. If desired, add a little more. Transfer the dough to a lightly floured work surface and knead until the dough is elastic. Shape the dough into a bread-like shape.
  4. Grease the baking pan and put the dough into it. With a inverted spoon we smooth and model the dough. Cover it with plastic wrap and let it rest for 45-60 minutes.
  5. Preheat the oven to 180 degrees. Place a metal or cast iron dish (NOT glass or ceramic) on the bottom rack in the oven. In addition, prepare 2dcl of hot water in another small cup. When the oven is preheated, cut the upper part of the dough two or three times with a knife – to make patterns. Place the baking model with the dough in the oven, then carefully pour hot water into the dish on the bottom rack, which will help make the crust of our homemade bread even tastier and crisper.
  6. Bake the bread for 30 to 40 minutes or until it rises and turns golden brown. Take the bread out of the oven and let it rest in the baking pan for 5 minutes. Carefully remove it from the pan and transfer it to a cool surface to cool down. Before cutting, the bread should be completely cooled down. Baked homemade bread can be kept in a plastic bag at room temperature for a few days. For longer storage, bread can also be kept in the freezer.
