Vegan Carrot Cookies
Hey! My name is Monika and today I will be sharing with you my experience and a delicious recipe, which I am still excited about.
Have you ever heard about carrot cookies or carrot cake?
Carrot cookies originate from England. I also tried them there for the first time. At first I thought it was extremely unusual, as I couldn’t imagine “carrot cookies” at all. Namely, they are called a bit differently there, they are called “carrot cake cookies”. We were sitting in a famous café in England, drinking coffee, reading the menu and saw the carrot cookies, so we had no choice but to try this unusual dessert.
I didn’t know what to expect: cookies and a carrot cake or a cake that has carrot cookies inside? Well they served us quite simple cookies that were stuffed with peanut butter and sprinkled with powdered sugar. We were told that the cookies are otherwise filled with a cream cheese glaze, and they replaced it with peanut butter. Quite daring, isn’t it?
I tried them right away and was immediately thrilled. They were so brittle and tender, they had a sweet taste, there was a slight carrot taste and they just melted in your mouth. You probably know that I ordered another serving without thinking twice! Before I left the café, I asked for the recipe, and got it from the chef who was just honoured that someone was so excited about his simple cookies.
As soon as I returned home, of course, I tried to bake the carrot cookies myself. I wasn’t sure if they would work out so well for me, but the recipe the chef gave me was so simple, that the cookies were just perfect. I baked twice the amount cause I knew they will run out quickly!
A few days later, I decided to bake an even larger amount and give them to my friends, as I was wondering if the carrot cookies would impress them as well. And it worked! Some even asked me for the recipe, while others asked for even more cookies. Of course, I also had to share the story of how I came up with the recipe.
Since I have known Nature’s finest quality products for some time, I used their peanut butter, coconut sugar, Himalayan salt and cocoa butter in the recipe.
I’ve decided that I want to share my story and delicious recipe with all of you, as I know you won’t find something like this anywhere else, than in the cute coffee shop in England. Now you have the opportunity to bake them at home. With simple ingredients, in less than 30 minutes. Later, let me know if they impressed you too!
Ingredients for the carrot cookies:
- 500 g spelt flour
- 50g oat flakes
- 250 g cocoa butter
- 250 g carrots
- pinch of Himalayan salt
- 1 baking powder
- 1 TBS. coconut sugar
- Bio peanut butter
Directions
- Take a large bowl and mix baking powder, salt, coconut sugar and oat flakes into it. Sift the flour and add it to the mixture. Cut the butter into thin slices, finely grate the carrot and add both to the mixture. Knead well all the ingredients and the cookie dough is ready.
- Before rolling out the dough, lightly flour the surface, so the dough will not stick. Take a rolling pin and roll out the dough to about ½ cm thick. You can use round models or a cup to design cookies.
- Stuff the cookies with peanut butter. It is best to place the peanut butter in the middle. Fold the round dough in half and make sure that the peanut butter will not spill out. Squeeze the edges together with your fingers, then use a fork (only on the edges) and be careful not to puncture the dough.
- Once all the cookies are filled, carefully place them on a baking tray lined with baking paper. When placing, make sure to leave some space between, because our carrot cookies will spread out a bit. Preheat the oven to 180 degrees Celsius. When it is heated, put the baking tray in it and bake for 15-20 minutes, or until golden-yellow.
- Once the cookies are baked, let them cool. Sprinkle with powdered sugar before serving.
